We’re done!

Thank you to everyone who gave Tai and I their support and encouragement.

30 days later I realize how hard it is to be a vegetarian, and I am glad that I did this challenge. However, I do intend to have a much deserved burger for dinner tonight :)

Tai: Day 8

Ello everyone!

Soo my day was pretty decent. :) Woke up at 7am to do some early morning preaching work. I grabbed some Taco Bell for breakfast.. DID YOU KNOW!?! That Taco Bell has this thing, called the "Fresca" menu, where it's a bit more of a healthier alternative??
I  mean, I certainly don't know "how" much more healthier, but it does taste more safer for me to eat.
  • I grabbed some nachos.. just tortilla chips, and cheese
  • AND a bean/cheese burrito. 
    • I know, I know, a bit unhealthy for my bowels, but OH WELL. ;)
Went out on the west side/Hillsboro/Beaverton side this whole day. :)
You do not know HOW MANY times we stopped for a potty break or a pit stop.. In total, we stopped FOUR TIME just because someone needed to pee... gosh.. darn pee-ers. xD

GRabbed some lunch at Safeway.. I ate from their asian lunch thing...
  • Some Chow Mein (without the chicken..)
  • some veggies stirfry.. :)
  • WATER! a 24oz electrolyte water bottle..... In other words, EXPENSIVE WATER.
Let's see, my day ended with a veryvery nice and long conversation with the lovely Kristen Shafer. :)
I miss her...
While talking to her, I was eating my homemade salad....
It consisted of:
  • Fried diced Tofu!
  • Baby Spinach
  • Cucumbers
  • Pickles
  • Avocados
  • Tomatoes
  • AND Gelatin free Ranch. :)
AND!! I added half a slice of a cheese bagel. I chopped up the bagel into pieces. :)

Tai: Day 7

Good late night everyone!
As you probably know, I'm trying SOO freaking hard to catch up.. :)

Okay! Woke up at 9:30 am to start my homework. I had a freshmen portfolio I needed to finish, and submit.. I also had to pull an non-existent essay outta my butt for Sustainability. It's basically a reflection.

Had breakfast at 11:30 am. Ate some more of my special salad I make. :)
It consisted of:
  • Fried diced Tofu!
  • Baby Spinach
  • Cucumbers
  • Pickles
  • Avocados
  • Tomatoes
  • AND Gelatin free Ranch. :)
Oh yeah.. :)

I did sneak in two bananas throughout my day of homework, and cleaning the house..

Dinner snuck around at 7:30 pm, and I had some delicious spaghetti, but with macaroni noodles.. I'm not a big fan of string noodles/linguini, and so I added some mac noodles in. The sauce was made from Prego spaghetti sauce, and since my family like our spaghetti a bit sweet, we always reseason the sauce. We add a bit of onions, garlic, and rosemary... and we add some extra flour to thicken up the runny sauce. Added some parmesan cheese for a sexy flavor. ;) Yes.. i did say sexy..

And that was my day! The food wasn't unappetizing. :) I love it all.

Tai: Day 6

Hey guys! :)
Alright, sooo let me just recap QUICKLY on my past four days of eating..

Monday was a really good day. I was very excited and motivated about this diet, and the day went along pretty well.
I had a final that day, so I had to go to school. I didn't really catch breakfast, but I had brunch, and it was amazing.

My final on Monday was just to come to class, and watch our final documentary videos that we were assigned to make. :)

Now that I still have your attention, my brunch was actually served in class. :) We as a WHOLE class ordered three pizzas from Hot Lips. Hot Lips is a sustainable (I believe) pizzeria. We ordered TONS of vegetarian food, and I was in COMPLETE and PURE BLISS.
I ate:
  • A rectangle/square pizza that was some dough, and tomato, herb, paste.. sauce.. 
    • it was like.. breadsticks that were already dipped in sauce... but BETTER
  • Some asparagus pizza.. FREAKING AMAZING
    • I just want to say, that I LOVE LOVE LOVE herbs, and what affect that have on food.. thank the lord.
And that was my brunch.. it was amazing, and I definitely had more than one slice. About five slices of the square pizza (it was pretty darn small), and three slices of asparagus pizza.
I would like to thank the loving and caring friends I have in class that got me some pizza before I even came to class.. I came to class late. <3

Afterwards, I headed home to do my house chores, and start a an FREAKING HUGE assignment/final that was due the next day..

Came home to eat some more (if you read the past blogs entries...) tofu and rice veggies stirfry.
I don't know why, but I'm like in love with tofu. I mean, I don't understand why people don't take much of a like to it as I do.. :P Maybe because I've been eating it my whole life?
Oh well.. so that was my daily food consumption..

Water? I had about two 24oz water bottles today.. I think I deserve more water, I was just lazy.. and didn't drink any. xD

snacks? I ate an apple, and about 7 macadamia kisses... and a pear. :)

Kristen: Day 7- First week check in!

It’s so bizarre to think that last Tuesday I was eating burgers and turkey, and now I’m checking my food labels for gelatin and anchovies (Both are made of animals).  I have to say that even though I do miss those things, I really don’t miss waking up and feeling sluggish or gross. I love waking up quick, and feeling alert.

I love feeling light after eating and my head isn’t always hurting anymore!I cant wait to start working out with Stephanie, and get back to running. I’m stoked to start exercising and really feeling better.

*I’ve decided not to always put down calories. I’m going to keep tracking them (See below for my favorite apps) but I don’t want that to be the focus of these posts*

Food Diary for Tuesday June 7th (Day 7)

Breakfast:
  • 2 Oven Baked Hash browns
  • 1- 8oz cup of Tea

Lunch:
  • Spinach Salad
  • Triscuit Hint of Salt

Dinner:
  • 1/2 Bowl of Cheerios cereal
  • 1/2 Almond poppy seed muffin
I went to the choir concert last night and was super late so I didn’t really get to eat dinner.. Ooops :/

And as an added treat I wanted to tell you guys which (free) iPod/ iTunes apps I’m using on my journey:

  • Spark People
  • Shop List Free
    • Keeping your shopping lists organized will make sure you don’t buy anything you don’t need/ won’t eat
  • Shape Up (Shape Up Club)
I really like all of these for calorie counting because some don’t recognize specific foods, so I use a different one to find the calories and generally add it to My Fitness Pal (Which is currently my favorite).

Kristen: Day 6

Okay guys, yesterday was probably the best dinner I have ever made! I didn't do too much during the day, but I definitely loved dinner.

Breakfast:
  • 1/2 Chocolate muffin- 345 calories
  • 1 Strawberry smoothie- 120 calories

Lunch:
  • Baby Spinach Salad- 76 Calories
  • 1 Biscuit

Dinner:
  • 1 Package Buitoni Whole Wheat Three Cheese Tortellini- 330 calories (HOLY CHEESE! )
    • However, this is still healthy because there were 16g of protein. That’s insane!
  • Bertoni Alfredo sauce- 110 calories
  • 2 plain Breadsticks- 54 Calories

This dinner took me 15 minutes to make, and was under $10! Plus it was healthy!

Tai: Day 5

Let's see, after the concert, I went home and slept for 5 hours before having to wake up at 7 am for early morning (preaching) service..

It was a nice morning though. Went to Starbuck's for breakfast (DEFINITELY not my choice). I grabbed a Chonga Bagel with cream cheese. If you haven't tried a chonga bagel yet, TRY ONE. It's a bagel with sesame seeds, cheese, and all sorts of herbs. ^-^ Delicious..

Oh.. and I grabbed a Grande Vanilla Bean Frappucino..
Yes, I was bad today.. -____-"

Service continued for the rest of the day, but I went and grabbed another snack at the Bipartisan coffee shop later that morning. I grabbed a Garlic bagel and hummus for lunch.

It was VERY good. I love the coffee shop here.

The only weird thing that happened to me was that the bathrooms were classified with political party animals.. Either an elephant or a donkey..

I'm not part of a political party, but I picked the elephant because elephants are cute. :3

Dinner came around quicker than I realized.. I ate a Vietnamese pancake. It had beans, bean sprouts, the pancake mix, onions, onion straws.. I chose not to put any meat or shrimp inside.. (boooeeeyyy).

My exercise for the day was playing hide and seek with lightning in the background and bats flying around outside. It's a recreational form of exercise. (; Running, and sprinting.. and more running.

Drank another Arizona Tea today. It was Raspberry Tea flavor.. I'm not going to mention the Calories details.. lol. Three 16 oz of water today. :)

Tai: Day 4

Haha so I guess it's a lot easier for Kristen and I to post our posts the day after. :)
We're both lazy.. Well, we're still posting, but it's such easier..

Okay, so I've been a bit bad these past few days. I've skipped breakfast. Yes, I know that that's bad, and don't give me the lecture about maintaining your body, and how it's good for your brain and such.. such.. ramble.. ramble... *sigh* I have reasons.. :P

Okay, so went to meeting in the morning at 10 am, and then left meeting at 12:30 to head to lunch. This was a tough lunch for me because we decided to go to Subway, and get lunch.. I was hoping they had a substitute for meat like tofu, or a garden burger (something), but all they had was the Veggie Delight. I was SOO torn. That's just VEGGIES in a sandwich. So we went to Subway, and I ordered the Veggie Delight with pepper jack cheese. What's nice was instead of getting meat, and cheese on ONE side of the bread, they gave me cheese on BOTH sides of the bread! :D I asked for: Lettuce, LOTSA olives, banana peppers, pickles, onions, cucumbers and guacamole (they're in season). To top off the sandwich, I added light mayonnaise, sweet onion sauce, and chipotle southwest. Oh! And I got a soup on the side.. I ordered the cream brocoli soup.. (thingy).

So in the end, the sandwich tasted pretty good. It tasted regular! I usually get the Spicy Italian sandwich, but this time it felt like I had meat in the sandwich already.. So I'm guessing I was never able to taste the meat in the Spicy Italian that I usually ordered.. I'm happy with the sandwich. :)

Later that day I went to go see BRUNO MARS in concert at Portland, so my best friend and I headed down to the Rose Garden (that area) and hung out.. We bought some Starbuck's. She drank a non-sweetened Mint Iced Tea, and I drank two Venti sized cups of water. :P

It was pretty hot out (90 degrees), so we were both thirsty like crazy.

Plus, waiting outside for two and a half hours in a FREAKING LONG line didn't help the situation.. But! I did get a tan, and I'm pretty happy with that. <3

The concert was amazing, and on the way back on the Max, we were starving, so our friend picked us up, and we went out for some late night dinner. I ordered a small fries at Jack in the Box, and a Side Salad. The Side Salad had iceberg and romaine lettuce blend, with cucumbers, shredded carrots, grape tomatoes and seasoned croutons served with Ranch dressing. It was alright for a late dinner..

Went home and slept the night away...

Kristen: Day 5

Okay guys, I’m sorry that I got off track, but yesterday was both JR’s birthday and the day he left for a business trip so I didn’t have time to actually write this out.

Warning: Sunday’s are my eat whatever days (if I have them), because I know I’ve been good all week. Yes I know that I eat gross stuff on Sundays, but it happens to everyone.

Yesterday’s diary:

Breakfast:

  • 1/2 Almond poppy seed muffin- 190 cal.
  • Strawberries- 20 cal.
  • 1 Biscuit- 127 cal.

 

Lunch:

  • 1 Biscuit (they’re my weakness)- 127 cal.
  • Baby spinach salad- 74 cal.

 

This is where it gets really unhealthy

 

Dinner:

  • Medium Dr Pepper- 200 cal.
  • Medium Natural Cut Frie- 420 cal. (EEEWWWW)
  • Medium Frosty- 340 cal.


Total for the day: 1498 calories

 

Exercise for the day was gardening again so my end total is:

1498 cal. - 183 cal. burned= 1315 calories total

 

My water consumption was about 10 cups for the day.

Hey bloggers, this is a day late I’m sorry! On days that Josh is over I will post my entry on the following day (if that makes sense). (SORRY IT’S SO LATE!)

Yesterday I didn’t really do much except go to a Christie family barbeque and play my first game of Apples to Apples, which I lost. Karen, Josh’s mom, is really awesome at that game.

Diary for the day:

  • 1/2 almond poppy seed muffin- 190 cal.
  • Strawberries- 20 cal.
  • Ice Tea- 80 cal.


Lunch:

  • Spinach salad
    • Baby spinach- 26 cal.
    • Lite ranch dressing- 20 cal.

    • Shredded cheese- 25 cal.

 

Dinner:

  • Garden burger- 100 cal.
  • Burger buns- 220 cal. (this seems really high)
  • Slice of cheddar cheese- 113 cal.

  • Iced Tea- 160 cal.

 

Dessert:

My total for the day was around 1200-1300 calories

 

I also swung on the CHristie’s new swing set for a while, but I don’t think I burned many calories. Oh well.

I’m actually posting this on Day 4 because I didn’t have time to last night. Sorry!
Meanwhile, yesterday went amazing.

I:
  • Replanted my garden into 2 beds
  • got my mint into a pot
  • got my strawberry into a separate pot
  • drove my parents to the store
  • went to the Christie’s for movie night
  • Got invited to a barbeque tonight :)
  • Had my first homemade chocolate chip cookie in a while
  • Had half of it eaten by a dog :( He snatched it out of my mouth!

All in all it was a productive day, and my quads are sore because of it!

Tai: Day 3

Before I forget!!

My lunch/breakfast.. BRUNCH today was a bowl of salad. :)
It consisted of:
  • Fried diced Tofu!
  • Baby Spinach
  • Cucumbers
  • Pickles
  • Avocados
  • Tomatoes
  • AND Gelatin free Ranch. :)
Oh yeah.. :)

Headed out for to go preaching with my friend for the afternoon, and grabbed some delicious Kim Bap. Kim Bap is a korean dish that's basically their version of sushi. This Kim Bap I usually eat is vegetarian..
Kim Bap (or Gimbap) is a sushi like dish that contains rice, protein-rich ingredietns, and a large variety of vegetables (pickled, roasted or fresh). I bought my dish at Pal-Do Market on Foster in Portland.

My Kim Bap contained rice, eggs (YUM), cucumbers, spinach, carrots, and danmuji (pickled radish). It's seriously delicious, so if you guys have time, go pick it up at a Korean supermarket..

Oh! I also had an Arizona Green Tea. :] 90 Calories per 8 oz.. I drank a 24 oz.. so 270 Calories in.. O-O
Dear god.. darn those companies and their tricky labels..

Also I drank three 16 oz water bottles.. refilled from my "eco-friendly" canteen. 

Came home, and had an apple. :)
Dinner:
  • Small bowl of rice
  • Tofu stir fry
    • This dish is considered a "monk" food, because monks don't eat meat.. T___T
    • It contained:
      • Tofu
      • Squash (I have noo clue what kind.. it's purple squash)
      • Carrots
      • Green beans
      • I feel like there should be more, but I can't recall..
Soo that's what I ate for the day. It was soo hot that I couldn't stop "glistening".. I need to hit the gym soon. I miss my dance classes already.

Tai: Day 2

Soo I've figured that maybe it's best that I post after each day. Does that make sense? :P So I'll post my blogpost the next day rather than posting on the day of my dieting. It's easier for me to contemplate what to write, and to think about what I ate..

Alright! So I woke up yesterday morning at 6:15 am. :] School starts at 8:00 am, but I need to shower, do my make-up (NOT), and take the Max Light-Rail to School... So we left the house at 6:35 am, and I took the Max Light-Rail at 6:50 am..

Got to school at 7:45 am, and went straight to Smith Union Memorial Hall to work on my class work. :P It's dead week at school, so everyone's studying away..

I needed to pull out two essays and a website by next week for class... OH! And STUDY for my Math final..
But instead, I worked on my photoproject...

Left Smith Union at 9:45 am to head on over to the Peter Stott Center for Hip Hop. We had our Hip Hop showcase today. :) It was amazing.. I'll post a video of that sometime soon..

So there you have it, I had an hour of Hip Hop (workout) at 10 am, another hour of Zumba (workout) at 11 am, and then I went to class..

Well, I grabbed few snack before. :)
I ate: a banana, and an apple.

Class started at 12:30 pm, and didn't end until 3 pm... so I didn't have time for lunch yet. BUT! I did drink three 16 oz water bottles that morning before lunch..

Headed off to lunch at Happy Kitchen (Chinese Restaurant...). I ate a plate of Chow Mien (or is it Low Mien??)... with no meat, or meat sauce, or oil that's been cooked with meat..
It was SOO tempting to not just try a piece of chicken.. -_______-"

Headed over to my Jazz dance class (workout) for TWO hours, and sweated my butt off... I'm going to miss my dance classes.. ): Yesterday was my last day of dancing..

I seriously need to find another medium of working out this summer.. Probably more dancing though.

I was thinking about taking the Hip Hop at school this summer, but I'm still thinking about it. :P I don't know if I'll even have time for it.. Hmmmmm..

Headed home, and ate 1 cup and 1/2 of rice with a few fried up pieces of tofu. I think that's my weakness. :) Tofu. I seriously love it, so I think I'll be good eating tofu for this dieting... Oh! And you can't forget the soy sauce.. Asians LOVE soy sauce.

Today marked my first challenge: Going out to eat. Vegetarian style.

It’s actually a lot harder than it seems. I couldn’t get Caesar salad because I know they use anchovies in their dressing (mine yesterday doesn’t have any in it), plus there were only a couple of meals without meat in it and that was pasta, that I had last night, or a Gardenburger®. So I took the plunge and ordered the burger of course asking if they fried the fries in the same oil as any other meat (they said no).

 

As I awaited I put all of the food for the day on my iPod food tracker app so that I can remember it for these blog posts, and this is what I saw:

 

*Note: I try to keep myself within:

  • 1200-1500 calories a day
  • 163-236g Carbohydrates
  • 32-56g Fat
  • 60-127g Protein (which is hard enough and now I have to do even more now that I’m cutting meat out of the diet)

That’s just what’s healthy for my age, height and weight… *

Breakfast:

Chocolate Muffin- 317 cal. (HOLY SHIT!)

 

Lunch:

Baby Carrots- 10 cal.

1/2 cup white rice- 102 cal.

1 tsp. unpacked Brown sugar- 11 cal.

*I eat my rice like mom eats her oatmeal, so I add a little brown sugar to it to kill my sweet tooth and still be fairly low calorie.*

 

Snack:

Tortilla Chips- 71 calories

 

Dinner:

1/2 Garden burger- 75 cal.

French fries- 215 cal. (So many calories haha)

Mr. Pibb- 150 cal.

*TELL ME THAT DOESN’T LOOK LIKE A BEEF BURGER?! I’m not going to lie I really liked the Gardenburger® and it feels good to know that I don’t have to skip my favorite foods (like burgers) but just substitute them with healthier, non meat options*

 

Dessert: Jolly Time Healthy Popcorn- 80 cal.

 

Total calorie count:

*Everything was under count today so I did good!  :) Except my calories were too low so I need to eat more tomorrow*

 

Water: So far I’ve had about 50 oz. so far, and I plan to add another 20oz. before bed. So today’s total will be 70 oz.

 

Exercise:

30 crunches

15 situps

30 pushups (spread out- I’m not that good yet)

Laundry (I kid, I kid!)

 

So there it is ladies and gentlemen, my second vegetarian day, and I feel great. I feel lighter and happier, and proud that I don’t want meat at all yet. :) YAY!

Tai: Day 1

Hey guys. :)

So here's my first blogpost for the our Vegetarian challenge.

So yesterday (June 1st) was the start of my dieting. I woke up perfectly fine and normal, and felt pretty good about the day..
I didn't eat breakfast until 11 am.. I was too busy working on a final project for class. I did though, have a snack.
I ate a banana. It was pretty delicious. Lol

Okay, so I just realized while writing this post how bland, and boring it might sound.. So please let me apologize in advance. I'm thinking for tomorrow's blog post (June 2nd), I'll add pictures or something.

Back to my story, I continued on throughout my day eating a few snacks.. Healthy and unhealthy. :P I ate an apple, and had a cup of Chex Mix from Costco.

I think I was a bit lazy, and unhealthy for the fact that I didn't have an exact breakfast, lunch, and dinner.
I need to change that.. *sigh*

All I drank today was waterwaterwaterwater. :] I have a 24 oz water bottle, and I drank about 3 refills..

Kristen: Day 1

Hello Blogosphere! How was your Wednesday?
To be honest I read blogs, and watched So You Think You Can Dance :)
Now I should warn you that I generally have to eat a lot during the day due to blood sugar issues, but it’s not as much as it seems. And yes I’ll probably eat more than Tai.
I haven’t exercised yet today, but I'll update this post below when I do
Now for my Food Diary

I'm feeling pretty good today, I've been tired a lot lately, but that's about to change :)

Tai's Going Vegetarian Introduction! :D

Hi guys! My name is Tai :)


Here's an introduction video of me. :)
I welcome you to the cornucopia of all blogs.. a vegetarian diet blog.
I'm writing this blog not just personally, but also with my AMAZING friend Kristen S. She's been such an amazing friend since sophomore year, and I'm glad we get to spend some more time together online... blogging away, and eating no meat... You can probably tell that I'm a bit reluctant to do this diet.. I WANT MY MEAT. MY BACON.

  • What do you want to be when you grow up: I want to be a Physical Therapist/Occupational Therapist because I've always wanted to help people, and is career will help people get better, and return to their normal life. I want to help the hurt ones, and make them happy.
